Meals Made Easy with The Green Bunny

Going out to eat is GREAT, and cooking can be enjoyable for me, too. But sometimes I just wanna open my fridge and grab a pre-made dinner that’s not frozen solid, ya feel me!?

That’s where Johnson & Wales grad Ashleigh Easterling comes in. Her meal prep service, The Green Bunny, aims to make life much easier (and healthier!) in the kitchen. She tailors her meals to meet your nutrition needs and can cater to those with weight loss goals. Ashleigh operates out of a pick-up window in a commercial kitchen in NoDa, and she appears on WBTV once a month to do cooking demos.

I stopped by The Green Bunny on a Monday and picked up five meals for the week. Here’s what I ate:

Salmon Stuffed Potato with Broccoli: loved the salmon/potato combo here. Delicious and filling, too!

Two Berry Salads, one with shrimp and one with chicken. The shrimp was super fresh, and I got plenty of protein on both salads. I ate these 2 days after pick-up and they weren’t wilted in the slightest.

Turkey Meatballs with Zoodles, Quinoa, and Marinara: took this one for lunch, and it was perfect. Five meatballs did the trick.

Crab Cakes with Broccoli: I ate this one for dinner so I could heat these up on the stove. These were full of crab and were super flavorful!

Needless to say, I would absolutely order meals from Ashleigh again. She’s an amazing cook and is definitely making a difference with her delicious, nutritious meals.
